I love good breakfast food. All the usual suspects — French toast, waffles, bagels, eggs — love them! I also really enjoy coffeecakes. There’s something exciting about cake for breakfast. It makes me feel a little bit fancy. I have a few favorite coffeecake recipes and this is definitely one of them. My mom has been making it for years and with good reason.
This Blueberry Coffeecake comes from the ancient pages of Cooking Light Magazine. In fact, our copy of the recipe was clipped out of the newspaper and is now old and yellow. You can find the recipe here.
I am not a huge blueberry fan, but I adore this coffeecake. The blueberries add just enough sweetness and a hint of sour. The crust created by the cinnamon sugar is pretty and yummy. It keeps well, cooks true to time, and is a big hit with my extended family. Give it a try!
