I love to cook, but sometimes making dinner doesn’t sound like any fun. Sometimes all you want to do is order a pizza. And some ice cream. But most of the time, a quick and easy salad meal is a better (and much healthier) idea.
The other night my family and I had this quick and easy tortellini salad for dinner. There was a recipe involved, but we didn’t follow it. We quickly cooked some frozen packaged three-cheese tortellini (ready in five minutes once the water is boiling!) and chopped up some romaine lettuce and fresh tomatoes. We tossed everything together with a handful of sun-dried tomatoes and some store-bought sun-dried tomato salad dressing. Yum yum yum!
It was quick, easy, and hit the spot (but I did still have the ice cream). You can mix and match all kinds of ingredients in this salad for a change of pace whenever you need something in your belly fast!
