Happy Belly – Part 3

It’s been a little quiet around here.  With travel for work, trying to get back into a healthy routine, and all the other everyday stuff, it’s been hard to sit down with my thoughts.  So I’m taking the easy way back to regular posting:  FOOD PHOTOS.  Here’s a peek at what’s been keep my belly happy lately.

I came home to a surprise dinner from my boyfriend, featuring caprese salad with grilled zuchini.

The main dish of my surprise dinner was a beautiful eggplant Parmesan.

Caprese salad makes pretty regular appearances in my kitchen.  This time on naan as a caprese pizza.

Sometimes I keep it simple for breakfast, with yogurt and fruit.

This is the dessert of dreams:  croissants, burrata, strawberries, raspberries, blueberries, and a drizzle of honey.

  1. What is on the french bread. That looks really yummy too! And burrata – how would you describe the taste. Haven’t heard of it, but read that it’s Mozzerella w/ creamy center? (Sounds odd but again haven’t heard of or tried it. – yours looks creamier too.) Like the almost disarray of this too. 🙂


    1. That’s the eggplant Parmesan — he served it on top of warm, crusty bread!

      Burrata is getting all kinds of attention around here. It’s pretty mild in taste, like typical mozzarella, but the center definitely makes it soft and creamier in texture. We like to slice our burrata in half (or quarters) so the inside gets some attention.
