Swiss Macaroni and Cheese for Two

Every now and then, the travel bug bites me.  Hard.  A few weeks ago, in part because of Love Taza’s gorgeous vacation photos, I started dreaming of Switzerland.  I’ve never been to Switzerland and never particularly wanted to go there, but now I can’t stop thinking about it.

Can you blame me!?

So until I can get there, I’ll travel by my fork, starting with this tasty Swiss Macaroni and Cheese for two.

3/4 cup uncooked elbow macaroni
2 tablespoons chopped onion
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup fat-free milk
1 cup (4 ounces) shredded Swiss cheese
1/4 teaspoon salt
1/8 teaspoon pepper

1.  Cook macaroni according to package directions.
2.  Meanwhile, in a small saucepan, saute onion in butter until tender. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.  Add the cheese, salt and pepper.
3.  Drain macaroni. Add to cheese mixture; toss gently to coat.

Yummy, easy, so good.
