Nutella Crepe Birthday Cake

Birthdays are a big celebratory deal in my family. My aunts/uncles/cousins and both sets of grandparents all live relatively close by, so we try to get together to celebrate each person’s birthday. There are plenty of us, so there are plenty of birthday parties. What that really means is that there is plenty of cake!

My mom’s birthday was at the beginning of this month and we got to celebrate her at three separate birthday dinner parties. My great aunt hosted a dinner that involved a homemade chocolate chip cheesecake yummy enough to still have me salivating when I think of it! For the celebration at my grandparents’ house, I made a chocolate cloud cake — it was beautiful and delicious (super light and fluffy!), but I forgot to take any pictures before we ate it all up. My mom choose a simple crepe cake for our small, nuclear family celebration on her actual birthday. I’ll admit that I was hesitant at first because a stack of super-thin pancakes doesn’t exactly scream “festive” to me, but I was pleasantly surprised.

We used 10 store-bought crepes (we found ours nestled in the produce section of Publix), but you could make your own if you’re more adventurous than me. We stacked the crepes, drizzling Nutella between each layer, and then dusted the top with powdered sugar. It definitely was not a traditional birthday cake, but it definitely was delicious. It was also quick and easy.

Oh! And I would totally eat the leftovers for breakfast.
