5 Delicious Ways to Eat Brussels Sprouts

Happy Thanksgiving!  I’m feeling all kinds of grateful and I hope you’re all having the best holiday.  Just in case you need some last minute inspiration for your Thanksgiving table tonight (or for any dinner on any night!), I’ve put together a little list of five really yummy Brussels sprouts recipes.

I love Brussels sprouts — they were the first vegetable that I stopped finding completely inedible (other than potatoes, which don’t really count) and they’ve stayed my favorite.  I’m more than happy to eat them when they’re roasted until crispy, with olive oil, salt, and pepper, but sometimes it’s nice to do something a little bit more exciting.  Here is a handful of delicious recipes for when you want to change up your Brussels sprouts:

Chicken Sausage, Brussels Sprouts, and Spiralized Sweet Potato Skillet from Inspiralized

This is such a nice combination of flavors and it’s so easy to put together.  You don’t even really need to spiralize the sweet potato, because little cubes work well too.

Shredded Brussels Sprouts and Arugula Salad with Sunshine Dressing from Cookie + Kate

I made this salad when I last hosted book club, as a side to heaping bowls of slow cooker potato soup.  The two played nicely together thanks to the subtle bitterness of the Brussels sprouts and the zingy Sunshine Dressing.

Crispy Buffalo Brussels Sprouts from Yes to Yolks

I love buffalo anything and these Brussels sprouts are no exception, even though I tweak the recipe.  First, I roast my Brussels sprouts until they’re super-crispy instead of frying them.  And second, I don’t let blue cheese come anywhere near my kitchen.

We made this pizza a couple weeks ago and it was so delicious.  It looks way more complicate than it is — the hardest part is working with the pizza dough.  After the dough is ready, you put everything on top and it all cooks together.  Easy!

Couscous Lunch Bowl

I am digging the grain + protein + veggie bowl situations that are popping up all over the place.  They’re convenient, easy to put together, and yummy.  I don’t usually use a recipe, but sometimes it’s nice to have a framework to build on once you’ve got an idea.

On the same day that we ate this beauty, my mom, sister, and I had Another Root’s Roasted Brussels Sprout and Couscous Salad for lunch.  So delicious!

Instead of making the recipe’s dressing, we used Aldi’s SimplyNature Organic Tahini Goddess Dressing because I love it so much.  I also added a few crushed pita chips to mine because I wanted some crunch.  And if you put the couscous and Brussels sprouts on top when they’re still warm, the lettuce wilts a little and it’s wonderful!
